Things I didn’t expect to be doing whilst running a whisky distillery, number 1,348.

Out-take today from filming for our super-special limited edition coming next week: Huntress Orchard Cobbler.  Preparing, baking, and then, of course eating, an Orchard Cobbler.

The flavours in this whisky are incredible, but they don’t come from the standard cask finish route - they come from the spirit itself. The heart and soul of any distillery but a special focus Nc'nean Distillery.

Here is the story behind it….  When I started on this whisky journey, I set out on a mission - to create experimental spirits and to pioneer sustainable production. I wanted to hero innovation in the whisky world, be curious, challenge tradition, and ask what if?

Out of this approach, our limited edition Huntress series was born. A series dedicated to spirit making. We recognise that maturation is critical in whisky, but our passion is really for that unaged malted barley spirit which comes straight off the still. And this year's Huntress release is a total homage to that ethos.    Unlike most distilleries, we run two different spirit recipes each year, one for whisky set to be released at a younger age, and one set to be released after ten plus years. The spirit matured for Huntress Orchard Cobbler comes from the distillation in the week after this spirit recipe is switched over – a time where cut points are changed and unusually high fruity compounds flood into the spirit.

But the funny part is, we didn't produce this insanely fruity 'crossover' week spirit on purpose, it was a totally unintended. We were already pushing the boundaries of conventional Scotch by running two different spirit recipes, but little did we know that this could cause an incredibly special and delicious run of spirit just once a year. Curiosity and experimental philosophy at its finest.

We've decided to name this year’s Huntress release Orchard Cobbler, as a recognition of those intensely fruity, warming and homely flavours. Cherry Bakewell, apricot marmalade and vanilla custard.

With thanks to the amazing Sasha Smyth-Osbourne and Matt Hastings for their creative genius, baking skills, videography, excellent crockery game and general banter.

Watch out for this going live next Tuesday, 23rd April in the UK (also coming to other markets but release dates will vary.).

This article covers so many of the key issues in Scotch at the moment: will there be an India trade deal? Are there too many new distilleries being built? What is the future for Scotch growth in the US and other Asian markets? What will the impact of rising costs be, especially on small producers? And what role should tourism play in helping players diversify their revenues? Thanks to Lukanyo Mnyanda for including Nc'nean Distillery
