🚀 Sharing some Insights from short interview with a Blue Bottle Coffee manager in NYC! ☕

Backdays while developing a coffee chain, I studied the market and interviewed various operational managers from leading global chains.

Recently, I revisited one of these interviews and decided to share it with you—it might pique your interest. After all, Blue Bottle Coffee is an incredible case study.

A few words about Blue Bottle Coffee:

  • Blue Bottle Coffee was founded by james freeman in Oakland, USA, in 2002
  • It started with small-batch roasting, selling freshly roasted coffee within 24 hours
  • The chain expanded very slowly in the beginning
  • In 2012, they raised their first $20 million
  • In 2014, they raised an additional $25.75 million.
  • In 2015, they secured another $70 million.
  • Opened the first café in Japan in 2015, followed by locations in South Korea, Hong Kong and China.
  • In 2017, Nestlé acquired 68% of Blue Bottle Coffee.
  • As of now, Nestlé fully owns the brand.
  • As of June 2024 the chain operates over 100 cafés.

Key takeaways from the interview:

🔹 Journey to Blue Bottle: Started for financial reasons and with a dream to open his own café someday. He chose Blue Bottle for its prestige, above-market pay, and top-notch products. 🔹 Worked at the same café for several years and quickly rose to a managerial position—quite rare for Blue Bottle, where managers are usually highly experienced or recruited from Starbucks. 🔹 New managers undergo a two-month training program. 🔹 The café handles around 800 transactions daily, generating about $8,000. That's roughly $240,000 monthly💰 🔥 🔹 Space Management: The café has ample space but no restrooms to avoid cleaning issues. 🔹 Employee Benefits: From day one, baristas receive a comprehensive benefits package, including dental insurance. 🔹 Wages: Baristas earn $16/hour; Shift leaders (senior baristas) earn $17/hour. Managers receive a fixed annual salary plus performance bonuses. 🔹 Labor Costs: Around 15-16% 🔹 Regular Oversight: Weekly Zoom meetings with the area manager, who can also make surprise visits to ensure quality. 🔹 Employee Perks: Free drinks at any Blue Bottle for baristas and their friends, 50% off food, and 30% off merchandise. 🔹 Performance Target: Each person aims to generate $104/hour, about 6.5 times their wage. 🔹 Barista Training: The first 3-4 weeks are intensive, covering sexual harassment, food safety, and other crucial certifications. Training progresses from customer interaction to advanced tasks like espresso shots and latte art. 🔹 Simplicity & Focus: Blue Bottle offers a streamlined menu with only one size per drink, minimal milk options, and no syrups or cinnamon. Every drink includes latte art—it's part of the price! 🔹 All drinks are made to order; no pre-made filter coffee.

📊 Interesting to see the Pareto principle in action for Delivero in the UK, even though the tail is significantly more powerful than the top performers.

For instance, in June 2024, 50k restaurants made approximately 12M orders.

🔝 The top 10% (5,000 restaurants) contributed around 7M orders, which is 58% of the total volume.

📈 The top 20% (10,000 restaurants) accounted for approximately 9M orders or 75% of the total volume.

🛒 The remaining 40k users made the rest, 3M orders.
