Her career includes leadership positions such as Director of the Office of Equity and Inclusion, Senior EEO Consultant, and Senior EO Consultant at Arizona State University. Prior to her roles at the university, Erin gained valuable experience as an Advocate and Equity Liaison at Independent School District 622.

Erin Ellison's early career involved legal and advocacy work, including serving as a Legal Extern in the Trial Department at the EEOC and a Judicial Extern at the Los Angeles Superior Court. She also honed her skills in business affairs during an internship at Paradigm Talent Agency and worked as a Human Rights Specialist for the City of Saint Paul.
