Yesterday, upon visiting a new Food Court in Mohali, I saw 7 Chai and Tea stores and only 1 Coffee store, not counting the 3 big brands that were there. Looks like Chai has come of age in the dining scene. Having a cup or kullar (clay single use cup) of Chai, (freshly boiled, not brewed), just like in an Indian home. They also offer everyday tea snacks like Bun Maska, rusk, biscuits. I was surprised to see "Churi" (fresh soft paratha crumbled with ghee and sugar or powdered jaggery) in the Mohali Chai shops. Stored are named Churi Chai or Punjab Churi...
Nowadays, when we go out, we often settle for a cup of tea instead of a coffee. Kudos to Chai Point and Chaayos in giving the humble tea it's rightful place in the eating out space. Chai shops have gone viral. In small branded ones can get a delicious Chai at Rs 20, more or less. In the big brands, you pay anywhere between Rs 60 to Rs 100 for a freshly made chai as compared to an average Rs 250 for a Cappuccino in a branded Cafe.
These Chai shops have given the freshly made chai its place of honor and one does not have to have the pre mix "chai latte" in the big brands. We've brought chai back home!

Last weekend I chanced upon a community event at Huddersfield, UK. The area was celebrating the impact of sheep on the town and region. There were 23 larger than life "singing sheep" spread throughout the town. On Sunday they were all brought together for the "HERD" finale. What impressed me was the diversity of the participants in the 1 hour music and dance performance – gender diversity, age diversity, ethnicity diversity. It was truly an all inclusive participation by the local community. What struck me was the kids song and dance with the chorus "The future is in our hands". How very true. This chorus was peppered through the event.
This has never been more true than now – Europe gripped with a heat wave, floods in India and S Korea … weather is breaking all records, with UK breaking the 40 deg C barrier last summer.
