Rebecca Schrage is the founder and CEO of Schragels, a bagel company in Hong Kong that she established in 2014.14 Born to a Chinese mother from Hong Kong and a Jewish father from New York, Schrage's bagel-making roots trace back to her grandparents who ran Jewish delis in New York during the 1950s and 60s.45

Schrage, originally from Massachusetts, moved to Hong Kong in 2009 for a finance job.23 Frustrated by the lack of quality bagels in the city, she started making them at home using her grandfather's recipe.6 What began as a hobby soon turned into a business when a chef tasted her bagels at a friend's birthday party and placed an order for his restaurant.1

Initially operating from a commercial kitchen, Schragels grew to supply bagels to leading hotels, restaurants, and food outlets in Hong Kong and Macau.4 The company's bagels are hand-rolled, kettle-boiled, and stone-baked daily, following traditional methods.5

In 2023, Schrage expanded her business by opening Schragels Delicatessen, a sit-down restaurant in Sheung Wan that offers an expanded menu including Reuben sandwiches, challah, and latkes, in addition to their signature bagels.23

Schrage's educational background includes a degree in economics and Asian studies from the University of Pennsylvania.6 Her bagels have been rated as the best in Hong Kong and among the top six in the world.45
