Where are the Indian vegetables on our menus?
I spent the last two weeks traveling, eating out almost every day. From Swiggy to Zomato India and even offline dining, I explored every option I could find.
But something was very odd about most of them - There were hardly any traditional Indian sabjis. Everywhere I looked, I found paneer in a hundred variations, dal, chole and at best, rajma.
But the diverse sabjis that we’ve all grown up eating at home - bhindi, baingan, palak, methi and more were absent. As someone who loves Indian food, this left me with limited options when it came to vegetarian meals.
And it got me thinking is it because:
- Indians genuinely don’t enjoy these vegetables when eating out?
- These dishes are not scalable for restaurants to prepare?
- They’re considered too time-consuming or complex to make?
- Or are restaurants simply opting for easier options to play it safe?
What most of us have forgotten is that India has 60+ unique varieties of vegetables, grown across its regions. Yet, when it comes to eating out, this diversity doesn’t translate to what’s on the plate.
This gap makes me wonder if there’s potential for restaurants and cloud kitchens to innovate and bring traditional sabjis into mainstream menus.
With the rise of farm-to-table dining and a growing consciousness around healthy eating, could this be the next big trend in Indian food?
