Evan Sims is the founder of Peak Yogurt, a company specializing in triple cream keto-friendly dairy yogurts, with a mission to produce delicious dairy products that promote better health outcomes by preventing chronic diseases.

Evan is deeply passionate about leveraging food, nutrition, and environmental factors to enhance the human condition.

His professional background includes 5 years as an engineer in the Fermentation Group at DuPont Industrial Biosciences (formerly Genencor/Danisco), where he focused on strain screening, process development & optimization, plant trials, and scale-up for industrial enzymes and proteins.

Prior to that, Evan spent four years in the Anseth Research Group at the University of Colorado, gaining expertise in chemical synthesis.

Evan holds a triple major/dual degree from the University of Colorado in Chemical Engineering (BS); Chemistry and Biochemistry (BA), with a senior thesis on cell-compatible click chemistry synthesis.

His specialties include fungal & bacterial fermentation, carbon- and mass-balance calculations for fermentation processes, multi-step chemical synthesis, and proficiency in various analytical techniques like NMR, chromatography, and spectroscopy.

Throughout his career, Evan has held various roles in different organizations, including Senior Scientist at Pow.bio, Fermentation Engineer at Zero Acre Farms, and Founder & CEO of Peak Yogurt.

He has also worked as an Engineer at DuPont Nutrition & Biosciences (formerly Engineer I at Genencor, A Danisco Division) and conducted research at the Anseth Research Group, University of Colorado.
